Are you ready for a Rendezvous

Why did the tomato blush? Because he saw the salad dressing! HA I always get a kick out of that joke.

I am trying to incorporate more fruit and veggies into my diet. My new goal as been to eat at least 90% of fruit and veggies and 10% meat. So far so good, especially because I am juicing in the mornings and that gives me the motivation to keep on-top of my goal.  
The lettuce is my canvas as I create the masterpiece of colors and combinations. If I am eating a salad for a meal I need that crunch, taste and color to entice and lure that fork to my mouth. I need that eye candy.
Since I am juicing I have an array of fruits and veggies in my fridge, so when I make my salad I have no excuse not be creative or take the time to prepare it. Everything takes effort, so the salad might take some extra steps. So does getting in your car and driving to a drive -thru, I debated between the two and it was actually more effort for me to pack my toddler in the car and drive down the street. SO making a salad it was and boy was I glad I did! This was the best salad I ever made down to the natural dressing. I can’t take credit for the dressing my friend, Diana gave me the idea I just tweaked it by toasting the garlic. 
So here it is

The staple to the salad minus your choice of lettuce 

I added fresh edamame beans to my salad

I layered my salad with the ingredients I had on hand

Organic spring salad mix, organic carrots I shaved to look pretty (need that eye candy), edamame beans, olives, red peppers, green peppers, yellow peppers, tomato, cilantro, cucumber, pepperchini’s, and crutons

When life gives you lemons just squeeze them, thats what I did all over the salad before I put the dressing on


Now for the dressing :

Making the dressing ; first you add olive oil and fresh garlic to your pan

It will brown very fast. So be careful when toasting


Take fresh avocado and mash it, then add the toasted garlic and squeeze some fresh lemon juice on it. Make sure to mix well.
