Day two of juicing

I never made it to the library yesterday to get a book on juicing. So I did something I don’t normally do, I just had fun with the idea and decided to learn as I go. I opened the refrigerator and I just picked out the fruit and veggies I thought would go well together. I figured if I would eat it as a salad it couldn’t be that bad as a juice right?

Breakfast :  1/2 of a cucumber, 3 carrots, 1 tomato, 1 1/2 cups of spinach and  1/2 of a lemon

It was delicious and very refreshing. I was very proud of myself for the concoction I put together.

For Lunch I decided to make roasted vegetables so I took what I had in my inventory.

Zucchini anyone? I was given this zucchini from the place that fixed my car after my accident. When I picked up my car there were an array of squashes from someones garden. When I first took the zucchini  my intention was to make zucchini bread. Which I might still do, hmm maybe I will freeze the bread until after my friends wedding and then stuff my face with it.

Baby portobello mushrooms, mini green and orange peppers, zucchini, and green peppers lightly coated with extra virgin olive oil.

I decided to eat an avocado as I waited for my roasted veggies to finish, um well roasting.

I wasn’t paying attention to how long I had them in for, again this is probably one of the many reasons my mother and grandmothers food always tastes better. This was an epic fail it didn’t taste like my mothers oven roasted veggies, they were all mushy except for the mushrooms. I was half tempted to just throw it all (excluding the mushrooms) in the juicer as it was already mush, so close. I was just too lazy as the thought of cleaning my juicer exhausted me.


For dinner : 4 Kale leafs, 1/2  a lemon, 1 tomato, 1 green apple, 3 stalks of celery, 4 carrots and 1 cup frozen blueberries.

Well there is a new Sherif in town and he politely said, “I MUSTACHE you to step away from the juice” (get it theres a “mustache” on the glass)

For my after dinner snacks: I wanted something sweet so I had gummy bears, and a banana then I wanted something spicy. I just bought this yesterday at the store, I thought it was smoky chili and lime peanuts. Yes I am aware the bag says, “The Good BEAN”. If you have children and take them to the store you will understand.

They are chickpeas and it took some getting use to for me it wasn’t until the second handful that I would be content. It helps that they are crunchy too as it satisfies that need for chips.

I went from sweet to spicy back to sweet. I had to make sure I got my protein for the day.

It wasn’t that bad considering its a protein bar. I was actually impressed.

I am thinking positive and I’m already anticipating the next day. No real big cravings that couldn’t be satisfied. I feel healthier and that is motivation enough.
