“Pasta La Mato”

My mother loves to cook! We can cook the same thing however her food always seems to taste better. The old adage about adding love, well I add plenty of that. I think the only thing I might be lacking is more enthusiasm and pizazz ( Something she got from her mother, I still haven’t acquired that skill I guess). Even in a blindfolded taste test my boys will choose Nannies dishes over mine. Nannie rules and mommy drools! Now if my Grandmother was cooking in the kitchen hands down we would all fail, she is the most amazing chef I know.

One of my favorite dishes my mother makes is the easiest. My youngest calls it “Pasta La Mato.” Translation Pasta with the tomato, lol. My mother always uses fresh ingredients and uses some spices from her garden.

For this simple and healthy pasta dish you will need fresh tomatoes, either from your garden or from the store.

Fresh mozzarella cheese and basil, you can use from the store. However if you are lucky enough to have basil in  your  garden use that.

You will want to bring your water to a boil, once it boils you need to add salt. My mother uses regular salt, however you can experiment with sea salt as well. For the pasta it depends on what kind you like, gluten free, whole wheat etc, then you need to figure out what type you want; penne, spaghetti, angle hair, fusilli, etc. For this recipe we choose Rotini. 
After you cut the tomatoes you will put them in the pan with some olive oil on low and as it starts to cook you smush it with spoon. This is going to be sauce for the pasta.

Once the tomato is the consistency that you want you will pour over pasta and mix in the basil and mozzarella. 
Then its time to Mangia!
