Raisins and Carrots and Rice Cakes “OH MY”

I have been extremely busy for the last couple of months its been crazy. I have school, the boys have school, sports, AWANA, youth group, tutoring, you name it! Multitasking has been the easy part if you are organized. The hardest part for me is meal time, not so much for the boys for me. I have outgrown oven baked chicken nuggets, tater tots, pizza and the same winner winner chicken dinner. I make a variety of kid friendly foods, NOT  mommy friendly ones. Once in awhile I dream of the day I will be able to eat an adult meal verses picking off my kids plates because I am just too tired to cook another meal for myself.

As most parents we often neglect ourselves while taking care of our kids. One thing I noticed while going to school is that I am rarely eating and if I am its not healthy, its fast food. Money wasted on junk that makes me feel so sluggish. I needed to find an alternative or my health and my jean size would ultimately suffer. After doing some research I found Susan’s Healthy Gourmet.  I couldn’t believe how reasonable it was. For the weekly price of coffee at the local commercial coffee house and what is spent on fast food, Susan’s Healthy Gourmet was a scrumptious deal.

I was uncertain at first due to the name healthy in the title. When I hear healthy I think of rice cakes with that cardboard taste and crunch that leaves an aftertaste of, “I’m on a diet”, in my mouth. I decided to give it a try for a week and see if they live up to the name Gourmet. Gourmet has a different meaning for my tastebuds, it usually means fabulous and tasty. Healthy and Gourmet don’t usually go together in my world, and if they did it would mean taking the frosting off my cupcakes.

Monday is when I decided to try Susan’s Healthy Gourmet for the week. I was like a little girl on Christmas morning waiting for the food to get here. They have certain hours they deliver your food to you, usually in the early morning. When I opened my door at 7am Monday I found a white cooler with ice packs inside keeping my three days worth of meals chilled. I decided to go with the breakfast, lunch, and dinner option.

I ravenously opened the container labeled “Monday’s Breakfast” like a crazed kid on Christmas morning and placed it in the microwave, container and all. You could have eaten out of the microwaved serving dish if you wanted to. I choose to put mine on a plate , I felt all fancy and it looked so gourmet.

                                            

Breakfast:

                                          Ham & Cheese Frittata, Breakfast Potatoes, Orange Juice
                                                                A hearty breakfast of extra-lean ham & low-fat Cheddar cheese, made with egg substitute 

             

                                                             

Lunch:

                                    Harvest Salad, Maple Dijon Dressing, Cantaloupe
                                                       Hormone-free grilled chicken breast, fresh pears, pecans & goat cheese over mixed greens 

                                                  

                                                                                                          
                                                                                                                 

Dinner:

Lemon Oregano Chicken, Risotto, Spinach, Roasted Beets
                                                  Citrus & Italian herb-rubbed chicken breast, served with creamy risotto & spinach with mushrooms 


                                                                                  

My tastebuds were more than just enthused, I was salivating as I looked at the other yummy items I would soon devour in the days to come. I was very surprised at first that healthy and gourmet could harmoniously be used in the same sentence. If its Susan’s Healthy Gourmet, then yes it is possible for these words to be beautiful intertwined with an appetizing result.
