Day 2 & 3 ~ Susan’s Healthy Gourmet

I am so excited to be trying out Susan’s Healthy Gourmet for the week. If you missed yesterdays post you can read more about it here or just scroll down to Tuesday’s blog post.  The food has been absolutely amazing and I am only on day two. I am eagerly anticipating my meals for Thursday-Sunday. Each day I have a new favorite meal. I was really surprised how BIG the portion sizes were. I thought I would be hungry and unsatisfied, its the complete opposite.  I have to show you the fabulous food that I have consumed. Reader beware I am not responsible for how you might look to others around you, for salivating and jaw dropping drools while staring at your computer.

Tuesdays Meals
Breakfast:
Pistachio Chai Muffin, Fruit Salad
Roasted nuts & spiced chai tea in a scrumptious muffin – the perfect way to start your morning! 


Lunch:
talian Antipasto Spinach Wrap, Cucumber Salad, Grapes, Chocolate Pudding 
Spinach, lean salami & ham, Mozzarella, ripe olives, red peppers & artichoke hearts 


My toddler enjoyed half of my lunch with me. So much for being a picky eater, or at least I was selfishly hoping this might be the case.  One of the many moments where I didn’t want to share, willingly anyway.
Dinner:
Creamy Chicken & Mushroom or Mushroom Only Penne, Sugar Snap Peas, Butternut Squash
Comforting multi-grain pasta with a rich, creamy mushroom sauce

 Wednesdays Meals

Breakfast:

Lemon Poppy Seed Bread, Raspberry Yogurt Parfait
Fresh lemon flavor with just the right amount of sweetness, paired with a creamy fresh berry parfait 

Lunch:

Sandy’s Turkey Burger, Outlaw Slaw, Apple
A ground turkey, Parmesan & chutney patty on a wheat bun – a customer & staff favorite! 

Dinner:

Chicken or Cheese Chiliquiles, Refried Beans, Creamy Squash
A muy delicioso combinacion of tortillas, cheese, onions, ripe olives & a spicy red & green enchilada sauce
